How does one go about demonstrating selectivity with ICP-MS? Is there perhaps a validation protocol available for ICP-MS.

Selectivity/specificity- the ability to asses/distinguish the analyte clearly from the presence of other components expected to be present.
With HPLC the analyte could be submitted to elevated temp for long periods, low pH or high pH conditions etc, and the analyte peak should be distinguished from any other formed breakdown products or excipients.

i think what you are mixing definitions. The definition of selectivity is correct, but what you describe sound more like "robustness" or stability of a method.
"Abundance Sensitivity" is what you are looking for.
If you have for example a Mn/Fe solution, where the Fe (56) amount is approx. 1-10 million times higher then the Mn (55) amount, you should be able to separate those peaks. But i guess this is what you meant.
